Ingredients
- 1 pkg Durian Seed with pulp
- 200 ml Whipping Cream
- 250 gr Dark Chocolate – cut into small pieces
- 400 mL Whipping Cream
- 100 gr Sugar
Cooking Method
- Start by making the ganache. Bring the 200 ml of whipping Cream up to a boil and add the chocolate. With a spatula, carefully mix until smooth.
- Take the Pulp from the Durian (discard the seed) and puree in a small blender until smooth. For an extra smooth texture, pass durian pulp through a fine mesh strainer.
- Add the durian pulp into the chocolate ganache, and mix until smooth.
- In a seperate bowl, whip the 400ml cream until soft peaks, gradually adding the 100 grs of sugar.
- Slowly fold in 1/4 of the whipped cream into the durian-chocolate ganache.
- Carefully fold 1/3 of the whipped cream at a time until well mixed.
- Durian Chocolate mousse can be piped into cups and enjoyed right away, or stored in refrigerator for upto 3 days.
- Garnish with strawberries, cherry jam, or mint. Enjoy!
