Ingredients
- 2 boxes Ocean Mama Swimming Crab (halves) *Rinse frozen legs under cold water to separate (1min)
- 2 tbsp Oil
- 1 Large White Onion
- 2 Stalks Celery
- 1 Fennel
- 2 Red Pepper
- 5 cloves Garlic (whole)
- 1 Tbsp Organic Red Curry Paste
- 6 Red Chili (optional)
- 4 Green Onion (large chop-garnish)
Cooking Method
- Start by dicing onion, celery, green onion and red peppers in uniform dice. Wedge fennel.
- Heat a large pot or pan on high. Add oil and white onion. Stir fry for 2 min. Add celery and stir fry for 2 min. Add fennel and stir fry for 2 min. Add red peppers and stir fry for 2 min. Add garlic and stir fry for 2 min.
- Add organic red curry paste and mix well. Stir in chili peppers (optional).
- Add partially thawed Swimming Crab. Mix to incorporate.
- Cover with lid and allow Swimming Crab to steam for 5 min. Stirring once.
- The Swimming Crab is ready when the meat becomes white, flaky and heated throughout.
- Spoon into your desired serving dish. Garnish with green onion.
